PAPAYA SALAD (Som Tum)
INGREDIENTS
1 cup of shredded green papaya ( Peel the papaya and rinse under running water. Remove th
1-2 Thai hot chilli
2-3 garlic
1 tbsp. of lemon juice
2 tsp. of sugar
1/3 cup of chopped long beans ( chop about 2 cm long )
1 tomato, cut into 6 pieces
2 tbsp. of peanuts
1 tbsp. of fish sauce or soya sauce
PREPARATION:
Put garlic, long beans and chillies in the mortar and mash with a pestle until crushed into pieces. Then add long beans, tomato, sugar, fish sauce, limon juice and mix together. Finally add shredded papaya and mix together well with the pestle and a spoon. Serve cold with fresh cabbage, lettuce or morning glory. Eat with sticky rice.

**Green papaya can be replaced by cucumber, cabbage, carrot, young mango and apple.
**The taste should be spicy, sweet, sour and a little bit salty.
